Ingredients

  • 3 leeks diced
  • 1 small fennel diced
  • 1 leftover cooked chicken breast diced
  • 1 teaspoon Ghost curry to taste
  • 1 teaspoon salt to taste
  • 1 cup of coconut milk
  • 1 cup leftover rice
  • 1/2 cup frozen peas and carrots
Instructions

Cook
20 minutes
Ready in
40 minutes
  1. Place leeks and fennel in pan with 2 tablespoons coconut oil
  2. Season with ghost curry and salt
  3. Cook until leeks and fennel start getting translucent. Roughly 5 minutes.
  4. Add in diced chicken, rice and corn.
  5. Cook 1 additional minute.
  6. Add the coconut milk and cook until it's all absorbed
Notes

Some Alternate substitutions

Make vegetarian by removing any meat products
Any left over meat, and any veggie that you liked cooked can be subbed in to add variety to this simple meal
Change up the spices chosen to change nationality of this dish (IE curries of any sort to go Middle or far eastern, a Mole or a sazon to go with central or south American
