What is Paleo

Paleo is simply avoiding grains and processed foods and making meals simply and coming from as close to the earth and local farmers as possible.

 

Grass Fed meats, Veggies, fruits and nuts.   The flours I use are from nuts and/or plants such as potatoes and cassava.

 

This is more of a lifestyle change then a diet as it has been portrayed.  Nor do I believe that we can replicate the paleo man's diet, but the point is to reduce the reliance on processed foods, getting back to the way we ate less than a 100 years ago.

Gluten Free -- What does this mean for your diet.

Gluten Free is yet another item mislabeled as a diet in my mind.  A diet is something that is a temporary attempt to lose weight.  Gluten Free and Paleo are complete lifestyle changes and have to be at their core for them to work.

 

So Why is gluten causing us issues when less than 50 years ago we had very few cases of gluten intolerance or celiac disease?   There are many lines of research looking into not just the gluten but many of the other additives that are added to our modern food today that may be the culprit that is leading to symptoms such as leaky gut, celiac disease, gluten intolerance and a much higher rate of Auto-immune disorders then say 50 years ago.
