I have always loved Pao de Queso (Quejo) in restaurants. In many restaurants that make this bread it is typically also GF. I decided to make a version of this for myself that was vegan as well since I need to be dairy free these days.

  • 1 cup ottos cassava flour
  • 1/2 cup coconut mil
  • 1/2 cup Wellesley Farms avocado oil
  • 1 cup daiya mozzarella style shreds
  • 3 small eggs

  1. Pre-heat over to 350
  2. Mix up everything but the cheese first until the batter forms
  3. Mix in the cheese
  4. Using table spoons form the batter to 'balls' placing them down on parchement paper on a cooking sheet
  5. Bake 25 minutes at 350
  6. Let cool for 5 before eating
